Healthy waste, not zero waste.
Zero waste is a billboard, not a strategy. A bakery case that's empty at 3 PM has already lost the customer — and the second drink she would have bought. SmartServe targets the industry's ~5% optimum waste profile and treats anything above it as a problem to solve gently, not violently.
Woods Coffee's April sales + waste workbook is multi-header and full of layout rows. Our DataIngestionEngine reshapes it into a clean per-product table of total_sold, total_waste, and sell-through rate.
If historical waste > 5% → the item is over-ordered. If waste < 5% → it's probably hiding stockouts (the case ran empty before 3 PM). We treat those two cases very differently.
Over-wasted items: scale demand to sales + a 5% buffer. Under-ordered items: scale UP 12% to recover suppressed demand. Print the morning order sheet.
Real-time inventory is compared against predicted afternoon demand. Items above their healthy window get a tier and a play — Loyalty Lift, Smart Bundling, or Flash Rescue.
Push notifications, POS upsell prompts, student-ID discounts, and Waste-Not Flights move inventory to people who actually wanted it — without training guests to wait for markdowns.
"If a Woods Coffee location is throwing out less than 5%, they're disappointing customers. If they're throwing out more, they're disappointing the P&L. SmartServe lives in the middle."
